Mashed Potato Sour

Mashed potatoes are prepared in variety of ways in different cuisines. In South Asian cuisine it is prepared with little more spices as compare to other cuisine, this mashed potato tastes some how spicy and sour too hence its name "Mashed Potato Sour". It is generally served with boiled rice and tradition Indian style lentils but you can also use it as stuffing in making potato bread or paratha. This recipe can be prepared in just 30-35 minutes and is enough for 4 persons serving.

Ingredients:

3 medium size potatoes (cut each into halves in length)
1/2 cup coriander leaves (finely chopped)
1/4 cup mint leaves (finely chopped)
5-6 roasted dry red chilies
1 teaspoon roasted cumin powder
2-3 tablespoon tamarind paste (or according to your taste)
Salt to taste
Mustard oil few drops

Preparation:

1. Take water in a deep sauce pan and let it boil.
2. When water starts bubbling, add potato pieces and let them boil on medium heat for 20-25 minutes. Don't boil potatoes too much otherwise they become very soft and your mashed potato would not last for long time.
3. Peel the potatoes after they become boil and mash them using fork or masher.
4. Crushed roasted dry red chilies using your hands and make them into very fine particles.
5. Now mix all the ingredients together i.e. mashed potatoes, coriander leaves, mint leaves, tamarind paste, salt,roasted cumin and crushed red chilies. When all of them mix well then make a dough of mashed potato mixture and coat with few drops of mustard oil.
6. Spicy and sour mashed potato is ready to serve with boiled rice and lentils soup at lunch. You can adjust the quantity of spices and tamarind paste according to your taste.
